Glera and Colombard: two routes to freshness

Colibrì uses Glera from Friuli Venezia Giulia in northeast Italy, while Moderato uses Colombard, a grape of southwest France valued for its natural acidity. This alcohol-free sparkling wine set lets you compare an apple-and-flower profile with rounder plum and almond notes.

Wine first, then the alcohol is removed

Both producers begin with wine. Colibrì removes alcohol using membranes; Moderato uses low-temperature vacuum distillation. These different methods create two non-alcoholic sparkling wines to explore side by side, each with 0.0% ABV.
